A gem of unmistakable quality

This paleta, or shoulder, is a ham made from the front leg of Iberian pigs which have been raised in complete freedom in Mediterranean forest pastures. Roaming freely, they graze exclusively on nature's bounty: natural plants, fresh spring water and, during the montanera season (October to February), the famous bellotas, or acorns. It is these acorns, rich in oleic acid, that lend these hams their characteristic exquisite flavour. 

Natural aging

After curing for no less than 18 months in natural drying sheds, the shoulders are ready to be enjoyed by the most demanding palates.  At the bottom of this page you can find a few comments of customers who already tried it.

Note: The shoulder has an outer layer of fat that needs to be removed as you cut it. If you prefer to avoid the inconvenience, we also offer boneless hams and packages of sliced ham.
