A true gem of Spanish gastronomy

The paleta, or shoulder, is a ham made from the front leg of the pig which, although a bit smaller, is every bit as delicious as the back leg. Due to its anatomy, it has a slightly lower ratio of meat to bone/fat, leading to a more economical price.

Our shoulders come from the famed Iberian pig, a breed commonly known as pata negra, or black foot. The dark red meat is lightly marbled with fat, giving it a rich texture and a unmistakable flavour that will make your mouth water. Unlike the acorn-fed shoulder, this shoulder comes from pigs that were not raised on acorns, so it's a bit more economical, which turns it into the ideal buy before stepping up to the king of hams: acorn-fed bellota.

Natural dry-cured process

Equally important for achieving this high quality product is the drying and curing process. This completely natural process can last up to 24 months! During this time, the meat undergoes various physical and chemical changes, which slowly create the final flavour and texture.

Heel lekker, maar veel vet aan

De Smaak van het vlees en de levering is uitstekend.
Slechts 3 sterren doordat er wel heel veel vet aan hangt.

Bedankt voor je beoordeling! Iberico ham heeft altijd iets meer vet dan Serrano ham, maar dit zorgt voor de uitzonderlijke smaak. Als alternatief raden we gesneden of ontbeende ham aan, deze zijn reeds ontdaan van vet.
