The key to our Iberian acorn-fed chorizo lies in the careful way the farmer raises the pigs. They live and graze freely in the extensive Andalusian dehesas, a unique pasture ecosystem found only in southern Spain. Here the pigs feed on natural plants and acorns. These acorns are what give the meat of the Iberian pig an incomparable level of quality.

After the finest cuts of pork have been selected, they are marinated in a special blend of Mediterranean spices, like the Spanish paprika that gives this cured sausage its classic red coloring.
Then the sausages are naturally cured over a period of 3-4 months in natural drying sheds. This process further accentuates the aromas and flavors, converting our chorizo into a magnificent product capable of surprising even the most demanding food lovers.

Chorizo, maar dan échte chorizo
Ik was op zoek naar echte chorizo om te gebruiken met koken, omdat ik alle tot nu toe verkrijgbare "chorizo" in Nederland niet echt iets met chorizo te maken vind hebben. De Chorizo Iberico de bellota stelt niet teleur; geweldig! Levering komt uit Spanje zag ik op de GLS site en was met 4 dagen binnen.

Grof lekker
Ondanks dat de chorizo nog relatief jong en zacht is smaakt die voortreffelijk. Pittig maar ook vol smaak. Ik hang hem nog een tijdje koel en droog in een doek te drogen tot die iets vaster is, bederven doet die niet!! Aanrader voor de vrienden van top quality foods.
Hetzelfde geldt trouwens ook voor de Salchichon Iberico..
